Wash the strawberries and pat them dry. Half the strawberries and stir in just enough PEPPERO so that the fruit absorbs some of the liquid. Not too much, as it tastes best when the PEPPERO doesn't soak into the heart of the strawberry.
Take a tall, wide glass and fill it in layers as follows: strawberries, whipped mascarpone, strawberries, then a thin layer of whipped mascarpone, finishing off with freshly whipped cream and a sprig of mint as garnish.
